The best tasting and most comforting food are the ones that require only a handful of ingredients.  There’s no special skills need to may it taste good, you just need good quality ingredients.  Here is our Sunday lunch.  The trout is the one from Calumet Fisheries Inc. and the herbs are from my garden.

RECIPE

Ingredients:

  • 1 lb. thin Spaghetti
  • 2 T. olive oil
  • 1 T. chopped garlic
  • 1/2 heavy cream
  • salt
  • pepper
  • parmigiano reggiano
  • chives
  • parsley
  • 6 to 8 oz. smoked trout (the trout was smoked with garlic and black pepper, but we added both to the pasta as well).

Bring a pot of water to a boil.  Add salt and a little bit of olive oil to the boiling water before adding the pasta.  Cook for about 6 minutes.  While the pasta is cooking, cooked the garlic over low heat with the olive oil.  Drain the pasta but make sure to reserve a couple of tablespoons of the pasta water.  Put pasta into the pan with garlic and pour cream over it.  Add salt and pepper to taste and the extra pasta water.  Simmer until the sauce thickens.  Plate and sprinkle with the herbs and parmigiano reggiano and lastly top it off with the smoked fish.  Eat as soon as possible!
