Insalata Caprese

Happy Friday everyone!  The tomatoes are loving this hot and wet weather.  My garden is bursting with Brandywine, Roma, and Yellow Bells.  The Caprese salad is one of my favorite ways to enjoy this seasonal favorite.  This salad comes from the Campania region of Italy, the southern part, where the beloved Neapolitan pizza originates as well as the best buffalo mozzarella and tomatoes.  It’s so simple.  You must start with the freshesh tomatoes from your garden (perfectly ripe and warm from the sun) or from your local market.  After that, you need some fresh mozzarella.  We bought some Belgioioso from the local Piggly Wiggly (America’s first true self-service grocery store).  Slice the tomatoes and cheese, layer on a plate, and scatter some basil leaves on top.  Lastly, sprinkle with some sea salt and drizzle with olive oil and balsamic vinegar.  Eat. :)
