Hello again. I bet you all have been busy with your holiday activities and maybe eating way too many sweets and cookies like we have. Here’s a simple, satisfying, and guilt free dish. It’s my new favorite salad.
Warm Tuscan Kale Salad
- 1 med. size shallot
- 1 T. olive oil
- 1 bunch of kale (Shooting Star)
- 1/3 lemon
- feta cheese (Athenos)
Clean the kale, remove the woody stalks, and chop into strips or however you like. Sautee some sliced shallots with the olive oil in a pan. (I like to use a large cast iron pan.) Add in the kale once the shallots are a bit transluscent. Gently wilt the kale for about 8 to 10 minutes. Add a bit of salt (not too much since feta is fairly salty) and some pepper. Take it off the heat, squeeze some lemon juice onto the greens, and crumble some feta cheese on top. Done.
